
We’re trying to eat all of our food up before we go grocery shopping. It’s our attempt at being frugal. So, I had some pre-baked pizza crust laying around and decided to make a white pizza- my favorite!

It was not only delicious but easy and quick as well. I brushed EVOO (Extra Virgin Olive Oil) on the crust and then covered it in chopped and crushed fresh garlic- an entire head! If you know me, you know I LOVE me some fresh garlic.
Did I mention I have really great heart health? Thanks, garlic.
I also added some spinach, cottage cheese (dabbed on), mozzarella and Parmesan. I topped the entire thing off with some premixed bread dipping spices. Very good- so good in fact that Matthew ate it up for breakfast this morning. I bet his professors loved that!
Recipe:
1 Pre-baked Pizza Crust (Available at Wal-mart in a two pack)
Extra Virgin Olive Oil (EVOO)
Fresh garlic (minced, sliced, diced, crushed- however you like it and however much you like)
Cottage Cheese
Baby Spinach
Mozzarella
Shredded Parmesan Cheese
Spices (oregano, garlic salt, etc… – whatever floats your boat)
Preheat the oven to 500F
On a cookie sheet or pizza tray, place crust and brush with EVOO
Cover liberally with garlic (I used an entire head, but you may want less)
Dab cottage cheese around (it will melt, so no need to cover entire thing)
Add spinach leaves all over
Top with shredded mozzarella and Parmesan
Sprinkle with spices
Cook for 6-7 minutes
